Nicolas rossingol

In 1997, Nicolas Rossignol created his own estate with 3 ha on the village of Volnay, Pommard, Beaune, Aloxe-Corton et Pernand-Vergelesses. In 1998, the size in total is about 16 ha. In 2005, some new appellations arrived with Savigny-les-Beaune 1ers Cru Fourneaux and Lavières and also Beaune 1er Cru Clos du Roy. In 2011, Domaine Nicolas Rossignol had 30 different appellations in total. The vineyard moved to Beaune for more space. In 2014, another 1.5 ha on Pommard 1er Cru and Pommard increased the production of the estate. Biodynamic vineyard practices and traditional winemaking, bottling without fining or filtration lead to wonderful aromatic complexities and structure.

A sustained but elegant woody, with chocolate and roasted accents dominating the olfaction, with black fruits in the background. The palate is concentrated, fat, tannic and liquorice in the final.

Reflects notes of cassis, blueberry and plenty of floral elements. The quite finely detailed and lightly stony middle weight flavors possess a suave mid-palate mouthfeel while culminating in a lingering and youthfully austere bitter cherry pit-inflected finish.
